9 inch pie shell
Juice of one lemon
zest of lemon
1 cup sugar
1 cup water

1/4 cup water
3 T. corn starch
3 egg yolks (keep whites for meringue topping)

Meringue topping
3 Egg whites
1/4 tsp. cream of tartar
5 T. sugar (added in 1 T intervals)

Directions:
Directions:
Bring to boil 1 cup water and 1 cup sugar.
Mix together and add to above 1/4 cup water, 3 T. corn starch and 3 egg yolks. Cook until thick, ADD Lemon juice and Zest. Pour into baked pie shell.

Meringue Topping:
Beat egg 3 egg whites with 1/4 tsp. cream of tartar, BEAT TO PEAKS. Add sugar 1 Tablespoon at a time until you have added the 5 T. of sugar.
