* 1 egg
* 1/4 cup whole wheat flour
* 1/4 cup white flour
* 1/8 cup oats
* 1/2 cup lowfat milk + 1/8 cup milk
* 1 tsp. ground cinnamon
* Cooking spray
* 1/4 cup nonfat ricotta OR Greek yogurt
* 1/2 cup blueberries
* 1/4 cup thinly sliced strawberries
* 1 Tbsp. sliced almonds
* Honey, to drizzle

Directions:

1) Spray nonstick skillet with cooking spray and heat over medium heat.

2) Beat egg, flour, and 1/2 cup milk until smooth. Whisk in 1/8 cup more milk to gradually thin batter. Stir in cinnamon.

3) Pour enough batter into pre-heated pan to make a large circle. Cook until bubbles form around edges, then flip and cook on other side (about 2 minutes per side).

4) Move to plate when crepe is done cooking. Spread ricotta (or yogurt) over crepe. Top with berries and almonds. Drizzle with honey, sprinkle with cinnamon and serve.
