Chicken (or ground beef)
chopped onions to taste
1 can chopped olives
3-4 stalk of celery
corn or flour tortillas
1 can chicken or vegetable broth
1 small can mild enchilada sauce
ketchup
cheese
salt and pepper

Directions:
Directions:
Boil chicken until tender. Chop.
In a pan cook chicken, onion, celery, and broth until it's "semi thick" consistency. (not dry!)

Mix enchilada sauce with ketchup to taste. (ketchup will cut the spiciness)

Dip tortillas in sauce place inside meat, olives and cheese in a stripe in side and roll up/ place in 9x13 dish, cover with cheese. Bake at 375 degrees till cheese melts.
