1/2 cup hummus
2 Tbsp. olive oil
4 boneless, skinless chicken breasts, cut into strips
1 cup breadcrumbs
1 Tbsp. shredded Parmesan cheese
Salt and pepper to taste
1 lemon, cut into wedges
Honey, for drizzling

Directions:
Directions:
1) Sprinkle chicken lightly with salt and pepper to taste. Put chicken strips in a plastic bag with hummus and massage to spread hummus evenly all over chicken. Remove from bag and roll each strip in breadcrumbs and Parmesan cheese.

2. Heat 2 tablespoons oil in a skillet over medium heat. Add chicken; cook until no pink remains about 3 minutes per side, turning once. If crumbs brown too quickly, reduce heat. Serve with lemon wedges to spritz over chicken, if desired, and honey for dipping.
