Dijon Mustard
Garlic
Olive Oil
Balsamic Vinegar (or Lemon Juice, Rice Vinegar)
Seasoning

Directions:
Directions:
• Put 2 tbsp. Dijon mustard (not grainy, but as spicy as you wish) in a small round bowl
• Add 1 large clove crushed garlic
• Stir in 1 tbsp. Balsamic vinegar and mix well
• While continuing to stir, drizzle olive oil into the mixture (Don't stop stirring!)
• Continue to add oil until the mixture is the consistency of mayonnaise
• Then add more oil (always just a drizzle!), a few drops of vinegar, and repeat until you have enough dressing
• Add pepper, salt, and/or fresh herbs (gently stirring in)
Notes:
This dressing keeps well in the fridge. It will separate, but still taste great.
Lemon juice, lime juice, or rice vinegar are good alternatives to Balsamic.
Add any of the above ingredients and more olive oil to leftover dressing to stretch it, if needed.
