1,5 teaspoon of olive oil

1 medium onion, chopped

1 medium butternut squash, peeled and cubed

2 medium or 1 big sweet potato, peeled and cubed

2 medium carrots, peeled and sliced

2 tablespoons fresh ginger, peeled and minced

1,5 teaspoon of light brown sugar

3 cups of broth or water

1 cup of cream style corn

Salt and pepper to taste

1. In a large saucepan, heat olive oil over medium-high heat.

2. Add onion and cook, stirring until it begins to brown, 3 to 5 minutes.

3. Add squash, sweet potato, carrots, ginger, sugar, and 3 cups of broth or water or until all ingredients are covered with liquid; bring to a boil.

4. Reduce heat to low, cover, and simmer until vegetables are tender, 15 to 20 minutes.

5. Puree with blender.

6. Add corn and season with salt and pepper to taste.
