4 eggs (slightly beaten)
1 c. oil
3 c. sugar
2 c. pumpkin
1/3 c. water
3 1/2 c. flour
2 tsp. soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

You will not need to use a mixer for this recipe. Beat eggs slightly. Add oil, sugar, pumpkin, and water. Mix well. Sift the dry ingredients together and add to the wet ingredients. Mix well. Pour into 2 greased and floured bread pans. Bake at 350º for 1 hour.

This is the recipe I used for years when my second graders made pumpkin bread. We started with the Halloween jack-o-lantern which I took home and baked. Back at school, my students scraped the pumpkin off the skin and then mashed it. I froze the mashed pumpkin and then, just before Thanksgiving vacation, we formed committees and each group of four students made two loaves of pumpkin bread. The school cooks baked it for us. Delicious!
