1/2 c. Small Pearl Tapioca
4 c. Milk
1/4 tsp. Salt
1 tsp. Vanilla
1/2 c. Sugar
2 Eggs - separated

Directions:
Directions:
Soak tapioca in 1/2 c. milk overnight in 2 qt. saucepan in refrigerator. Add remaining milk and salt. Bring to a boil. Stir constantly to prevent sticking. Add sugar slowly. Reduce heat to low and simmer 5 minutes. In large bowl, beat egg yolks. Gradually add some of the hot tapioca mixture to the eggs, stirring carefully so eggs will not curdle. Return to saucepan. Bring to boil, stirring constantly. Reduce heat and cook 3 minutes. Remove from heat. Beat egg whites until stiff. Slowly add hot mixture to egg whites. Do not over mix. Add vanilla. Serve warm or cold.
