2 c. Flour
1-1/2 C. Sugar
1 t. Baking Soda
1/2 t. Salt
1/2 t. Cinnamon
3 Eggs
1/2 C. Oil
1 t. Vanilla
2 C. Chopped Mangoes
1/2 C. Cocoanut
3/4 C. Macadamia Nuts, chopped coarsely

Directions:
Directions:
Combine dry ingredients and sift. Mix the wet ingredients and stir in the dry (save fruit & nuts for last), adding nuts and fruit at the end. Spoon into 2 greased 8 x4" pans or 1 8 x 4 and one mini loaf pan. Bake 350 degrees for 50-55 minutes (until top of loaf is firm to touch). Let cool in pan for 10 minutes then remove from pan and cool completely on a rack.
In place of the coconut you can use chopped dates.
