1 chicken, 3-5 lbs., washed and patted dry
2 tbsp. melted butter
4 tsp. Spice Island Beau Monde Seasoning (or plain old celery salt)
2 tsp. thyme
4 carrots, peeled and cut into 3-4 " long, 1/4" strips
1/2 bunch (3-4) green onions, cut into 1" pieces
1/2 cup dry white wine
Optional: 2 large potatoes, peeled and quartered

Preheat oven to 400º.

Sprinkle chicken cavity with 1 tsp. Beau Monde and 1 tsp. thyme. Place in small roaster or Dutch oven, breast side up. Rub chicken skin with butter and sprinkle with remaining Beau Monde and thyme. Roast, uncovered, for 1 hour.

Remove from oven. Add carrots, onions (optional potatoes) and wine to bottom of pan around chicken. Cover tightly with foil or roaster lid. Return to oven and continue roasting for 45 minutes.

Serves 4.

You may find this recipe tastes just like Chicken Coq au Vin. It was given to me as Chicken Beau Monde, so I'll stick with that. I have found Beau Monde Seasoning at Von's grocery stores, but learned that I could substitute celery salt in the absence of Von's in my area.
