5 large beets, tops removed
4 small sprigs fresh rosemary, minced
2-3 cloves garlic, sliced thin
1-2T canola oil
salt & pepper as desired

Directions:
Directions:
Preheat oven to 400º. Peel the beets (wear gloves or peel under water to prevent staining). Cut beets into 1/2" cubes. In a large bowl, add beets, minced rosemary and sliced garlic. Add oil, salt and pepper. Toss to coat. Place in a shallow baking dish and cover. Bake for 30 minutes. Uncover and bake for an additional 30 minutes.
