Favorite chocolate chip cookie dough recipe
Good vanilla ice cream, softened (I like the Costco Kirkland brand)
Hot fudge
Caramel topping
Whipped cream

Press cookie dough down into a lightly greased pie tin so that it is evenly formed into a pie crust of sorts. Let it be a little thick. Bake according to your cookie recipe, just make sure not to overcook (underdone is better). Let cool completely. Spoon softened ice cream into the "pie shell" as the filling. Cover with plastic wrap and freeze. When ready to serve, drizzle caramel and hot fudge (generously) in a lattice pattern over the top and serve with whipped cream. (Slices best into pie wedges if allowed to thaw for just a few minutes).

One Thanksgiving when I was in graduate school I had been so busy that I had forgotten about my food assignment. I had no time to make a traditional pie so I came up with this one and took it to the family Thanksgiving dinner. It was a hit and the first pie completely eaten that day. You could come up with endless variations on this one by using different cookie recipe/ice cream flavor combinations. Kids especially love this.
