2 large slices of good peasant bread sliced about 1/2" thick
2 T. extra virgin olive oil
2 thin slices fresh mozzarella
2 large slices fresh tomato
salt and pepper to taste
3 to 4 large fresh basil leaves washed and dried

Directions:
Directions:
Lightly brush one side of each slice of bread with the oil
Place the mozzie on the oiled side of one slice
Top with the tomato slice, season with salt and pepper
Add the basil and cover with the other bread slice-oiled side down on the basil
Brush the outside of each bread slice with more oil
Heat a heavy fry pan and cook over medium heat about 3 minutes per side or until golden-weigh the sandwich down with something heavy or push down with a spatula. Of course, the easiest thing to do is to cook it in a panini press!
Slice in half to serve.
