4 chicken boneless breasts-not too thick-you might need to do pounding to make them thinner or you might try chicken tenders for something different
Flour to dust chicken
Nonstick cooking spray
2 T. oil
1/4 c. white wine
1 tsp. minced garlic
1/2 c. low-sodium chicken broth
2 T. fresh lemon juice
1 T. capers, drained
2 T. unsalted butter
Fresh lemon slices
Chopped fresh parsley

Directions:

Season chicken with salt and pepper and then dust with the flour
Spray a cold pan with the nonstick spray, add oil and heat to medium high
Saute chicken 2-3 minutes until golden, turn over and saute 1-2 minutes with lid on. Remove to a warm plate and drain off oil
Deglaze pan with wine and add garlic. Cook until slightly brown (don't burn!) and liquid cooked down-about 2 minutes
Add broth, lemon juice and capers. Add chicken to pan and cook on each side about 1 minute. Remove chicken to platter. Add butter and lemon slices to pan to heat up and pour over chicken. Garnish with parsley.

This recipe is the most similar to a wedding dinner of veal piccata that we attended years ago of one of Dan's friends who married an Italian girl. Serve with asparagus and great rolls to soak up the rich juices!
