3/4 c. oil
1 1/2 c. sugar
2 eggs
1 tsp lemon extract
2 tsp vanilla
2 c. flaked coconut
4 c. flour
1 tsp. salt
1 tsp. baking soda

Bake at 350º for 12-14 minutes. (It is pretty to cut these out and "stamp" them with a pretty cookie stamp or the bottom of a pretty glass).
