½ c. butter
2 Tbs. sliced green onions
1 clove garlic chopped
¾ tsp. salt
1 pkg. frozen lima beans, corn, and peas
2 fresh tomatoes sliced thin
1/3 c. fine dried bread crumbs

Directions:

Cook onions and garlic in butter. Mix with lima beans, corn, and peas. Pour in baking dish. Top with sliced tomatoes and breadcrumbs. Bake at 350 for 50 min.

From Pam: This was Mom Faun’s best way to get us to eat our vegetables. We can all remember many Sunday dinners with this dish. This is a recipe she found in a Sunday paper. I have often wondered what made her try it, but we all loved it… especially father Myron who liked to eat it with toast. From Stacey: I substitute small diced carrots for lima beans :)
