1 ½ c. brown sugar
1 egg
2/3 c. oil
1 tsp. vanilla
1 c. buttermilk
2 ½ c. flour
1 tsp. salt
1 tsp. baking soda
2 c. rhubarb, cut
½ c. nuts

Directions:
Directions:
350° - 45 mins to 1 hour
Mix first 5 ingredients; then add rhubarb. Fold in flour, salt and nuts. Pour into greased pans and top with ½ c. sugar, 1 T. butter, ½ T. cinnamon - mix and sprinkle on top of loaves. Makes 4 mini loaves or 1 big one. Cooking time changes as to size of loaf pans. When toothpick comes out clean, bread is done.
