"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
3 cups flour - half wheat/half white (I use all whole wheat and it works out great
2 cups sugar (I put in half of the sugar it calls for)
1 cup oil ( I do 1 cup applesauce instead)
2 tsp baking soda
1/2 tsp salt
3 tsp cinnamon
2 eggs
4 cups of apple

Directions:
Directions:
Skin 4-5 apples and cut off the core (I don't skin the apples). Chop apple halves into small chunks (you'll need around 4-4 1/2 cups of these apple chunks). Mix other ingredients together. Mix in apple chunks. In a 9 X 13 size pan (lightly greased) pour mixture in and press down (also great in muffin form!) Bake at 350 degrees for 40-45 minutes- check after 30 minutes depending on how your oven cooks.
