4 salmon fillets
1 ½ teaspoons minced garlic
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Glaze:
¼ cup apricot nectar
¼ cup apricot jam/preserves
1 tablespoon Dijon mustard
1 ½ teaspoons white wine vinegar
1 ½ teaspoons honey
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Directions:
Directions:
To prepare the salmon, sprinkle fillets evenly with minced garlic, salt and pepper. Cover and refrigerate for 15-20 minutes.

To prepare glaze, combine all ingredients in a small sauce pan and bring to boil. Reduce heat and simmer until reduced to ¼ cup (about 10 minutes). Remove from heat. Set aside.

Fire up the grill. Place fillets, skin side up, on a grill rack coated with cooking spray (or make a tin foil "tray" to grill it on). Grill 2 minutes; carefully turn over. Grill 4 minutes or until fish flakes easily when tested with a fork. Brush each fillet with glaze; grill 30 seconds. Can also pour glaze over the top of the salmon and cook in the oven if you can't grill. Excellent served over quinoa!

This is one of my very favorite salmon recipes, given to me by Adam's friend Jon Fotheringham. Adam and Jon and I made this one day for a business lunch Jon was having for his co-workers and everyone raved.
