1 lb. ground beef
1tsp. salt
1tsp. paprika
Pepper to taste
1c. rice (optional)

Broth
4c. water
6 green onions diced
½ green pepper diced
2 carrots diced
2c. chopped tomatoes
2tsp. salt

Directions:
Directions:
Bring all ingredients in broth to a boil. Form meat mixture into balls and dust in flour. One by one add the meat balls to the boiling broth. Cook 40 to 50 minutes on simmer. Add ¼ c. chopped parsley before serving (optional). Serve with crusty bread.

From Pam: The first time Grandma Faun (mom) made this soup we were all a little skeptical. “Bulgarian” sounded foreign. But she served it in a beautiful white soup tureen and the flavor was delicious. It was instantly a family favorite made over and over again.
