1 1/2 lbs ground beef
2 eggs beaten
3/4 cups dry breadcrumbs
1 tsp salt
1/2 tsp ground pepper
2 tsp dried oregano
1 tsp garlic powder
3/4 cup grated Parmesan cheese
1 14oz. can whole plum tomatoes including juice
Water

1/4 cup Parmesan cheese
1/4 cup dry breadcrumbs

Directions:

Preheat oven to 375º
Spray 9 x 13 baking dish with Pam.
Spread 1 tbs olive oil on bottom of baking dish.
In a large bowl, mix together beef, eggs, breadcrumbs, SPOG and cheese.
Strain tomatoes and hold aside. Put juice from tomatoes into meat mixture.
Mix ingredients together.
Add a little water if necessary to make sure that mixture is not too dry.
Shape beef mixture into a loaf and place lengthwise in middle of baking dish.
Chop tomatoes and sprinkle on top of meatloaf.
Season top of meatloaf with oregano and cheese.
Sprinkle breadcrumbs on top.
Bake in preheated oven for approximately one hour.

My mother Millie made a meatloaf similar to this. She never wrote the recipe down, but I'm pretty sure that this is very close. She would often include peeled, oiled and 1/4 inch sliced potatoes in the baking dish along with the meatloaf.
