6 Chicken breasts, cooked and diced
3 tbsp olive oil
1 large onion, chopped
1 Red Bell pepper, seeded and chopped
1 mild chili pepper, seeded and chopped
2 Cloves Garlic, chopped
4 (15oz) cans Great Northern Beans
1 (16oz) jar salsa
1 (14oz) can chopped Tomatoes
1 (15oz) can yellow Corn
2 cups Chicken Broth
1 (12oz) can or bottle of beer
1 tsp ground cumin
1 cup shredded Monterey Pepper-Jack cheese
Salt and Pepper to taste
Fresh Cilantro, for garnish chopped red onion, for garnish

Directions:
Directions:
heat oil in a large heavy pot over medium-low heat. Add the onion and peppers. Cook, stirring occasionally, until soft, about 10 minutes. Add the garlic and cook 2 minutes longer. Add the beans, salsa, tomatoes, corn, chicken broth, beer, and cumin, Simmer, uncovered, over medium heat for 20 minutes. Add cooked chicken, cover and simmer an additional 20 minutes. Add Monterey Pepper-Jack and stir to blend. Season with salt and pepper. Serve with garnishes alongside.
