Ingredients: I triple this recipe for my family and friends when we have a party.
PIE DOUGH FOR FRIED PIES: 2 cups Flour 1 tsp salt 1/3 + 1 tbsp. cup butter 1/4 cup water (or more) Oil for frying
Fruit for Filling: Canned peaches Cinnamon Corn Starch Butter

Directions:FRUIT FILLING: (Our favorite is peach and that’s the one I remember mom making the most.) Drain syrup from peaches and thicken syrup with corn starch by cooking, stirring constantly. When thickened add the canned peaches and add cinnamon and butter to taste. When finished, place into pie dough rounds and follow directions for frying. When complete, drain on brown paper bags and dust with granulated sugar.
DOUGH: Measure flour and salt in a bowl. Cut in butter with a pastry blender until particles are size of peas. Sprinkle water gradually mixing with a fork until flour is moistened. Press dough into a ball. (I add more water gradually because this is 1/2 the butter of a regular pie dough.)
Roll out 6 to 7 inch rounds. Add filling and then moisten each pie round with water around the edges then fold over and crimp together with a fork. Fry individually in hot oil. |
