3 pounds beef chuck roast
1 medium yellow onion, sliced

Roast Rub Preparation:
1 teaspoon meat tenderizer
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon paprika

Directions:
Directions:
Preheat oven to 350º F. Prepare roast rub by mixing all dry seasoning ingredients together in a bowl. Rinse the roast and dry well with paper towels and rub the seasoning mixture all over the roast. Add more or less seasonings to taste. Take onion slices and place on heavy duty foil then put the roast on top of the onions and put remaining onions on top of the roast. Wrap roast tightly in the foil. Roast in oven for 60 minutes (20 minutes per pound) or to desired degree of doneness. Open up foil for the last 10 minutes for browning purposes. Remove roast from oven and let rest for 15 to 20 minutes before cutting.
