1 10 oz. package frozen chopped spinach
1/4 c. finely cut red pepper
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. melted butter
2 c. cottage cheese
4 c. shredded monterey jack cheese
2 cans mild diced green chiles (4 oz. each)
10 eggs

Directions:
Directions:
Heat oven to 325º Beat eggs, add flour slowly, whisking. Put in cottage cheese, cheese and vegetables and mix. Place in large pan, bake at 325º for 35-40 min (test center). Cut into squares.

From Stacey: This is delicious served warm or cold. Perfect for brunch or even the main dish for dinner served with a big salad and some bread. One of my favorites!
