Ingredients:  
4 small carrots (peeled, cut to 1 inch pieces)
1 onion, chopped
1 cup small white mushrooms
2 small new potatoes, scrubbed, cut to sm pieces

Add:
3 tbsp vegetable oil
1/4 c. apricot preserves mixed with 2 tbsp warm water
2 tsp thyme (fresh is best, dried works too)
salt and pepper to taste

Directions:
Directions:
Coat vegetables evenly in apricot mixture. Cook in baking dish at 450 degrees. Reduce heat to 350 and cover if vegetables are browning too quickly. Cook until vegetables are just tender, but not mushy.
