2 Tbsp butter
2 Tbsp Flour
2 Cups Milk
2 Cups grated cheddar Cheese (or to taste)
Hard boiled Eggs
Paprika

Directions:
Melt 2 Tbsp butter in a large Sauce pan. Then add the flour and stir to make a rue. Add the milk and bring to a boil, stirring constantly. It will start to kind of thicken as it heats. Then add grated cheese (2 cups is a guess- I never really measured but everything else in the recipe is twos so why not?!?) Sprinkle in a little paprika for color. Peel and slice the eggs and add to the cream sauce (I usually do a dozen or so). Spoon over one or two slices of toast and top with a little bit of shredded cheese and a sprinkle of paprika for garnish. Easy and Yummy.

This has been a tradition with my kids from the time that they were just little. As tiny kids they didn't really like hard boiled eggs so every Easter I would end up with a couple dozen wasted hard boiled eggs. but I found this recipe and the kids loved it, so now it has become an Easter tradition. Even now every Easter the kids ask for Creamed eggs on toast! They might even prefer it to a Ham dinner!
