1-2 tbsp. red curry paste (depending on how spicy you you like)
1 pound of skinless boneless chicken breasts or ground chicken if available
1/2 tsp. salt
1 tbsp olive oil
1/2 cup of Persian cucumber
1/4 cup chopped shallots
3 tbsp chopped cilantro
2 tbsp. fresh lime juice
8 Napa Cabbage Leaves
Thai chile paste (optional)
lime wedges
dry roasted peanuts if desired

Combine curry paste, chicken and salt (if grinding chicken breasts combine in food processor; process until smooth). Heat a large skillet over medium high heat. Add oil to the pan; swirl to coat. Add chicken to pan; saute 6 minutes or until done, stirring to crumble. Remove from heat; stir in cucumbers, shallots and lime juice. Place 2 cabbage leaves on 4 plates; divide chicken mixture evenly among leaves. Serve with chili paste if desired and a wedge of lime. I like to sprinkle a few dry roasted peanuts on top
