Ingredients:  
Ingredients:  
1 - 1 1/2 lbs. cooked chicken (shredded or cubed)
2 c diced tomatoes
1 c picatnte sauce
1/2 c rice
1/2 c corn
1 c zucchini halved and sliced.
4 c chicken broth
1 c cream cheese, cubed

Topping Ingredients:
Cheddar cheese
Tortilla chips
Sour cream
Cilantro

Directions:
Directions:
Add all ingredients (except toppings) into a large pot.
Over medium heat, bring to a boil and reduce heat to a simmer.
Simmer for 1 hour, stirring occasionally.
Ladle into bowls and sprinkle with toppings

Feel free to adjust the ingredient amounts to your liking. I almost always add more corn and zucchini. I also like to add black beans.
Just remember that you'll have to add more chicken broth to keep it "soupy".
