1 package of dry yeast
1 tsp. of salt
1 tsp. of sugar
3 tbsp. Fennel seads
4 c. bread flour
1/4 cup extra vergin olive oil
1 large egg
1 3/4 cups warm water

Directions:
Directions:
Combine warm water (not too hot or it kills the yeast) yeast, sugar and salt. Stir with a wisk until disolved and let stand for 15 minutes until the yeast begins to foam. Slowly mix in flour and blend. Dough should be sticky but not like glue. If you need to add flour, do so a tablespoon at a time.
Finally, add beaten egg and olive oil, mix again and knead until smooth and pliable or until dough does not stick to bowl or your hands. Spray bowl with olive oil and roll dough so it is coated an all sides.
Cover and let stand for one hour. Punch down risen dough, knead for five minutes and let rise one more time. Fill pasta pan half full with water, salt and bring to boil. Tear off pieces of dough about the size of a golf ball and roll into a snake about the size of your finger. Form into a circle and press the ends together. Drop six at a time into the boiling water until they float to the surface. Take out with a slotted spoon and place on a cookie sheet covered with parchment paper. When the sheet is full (don't let them touch), brush with a beaten egg and sprinkle with a little salt. Cook until golden top and bottom at 375º. Remove and let them cool completely on a wire rack.
Tarralles should be crisp and hard on the ouside but softer and chewey on the inside.

Bake for about 20 minutes based on size and thickness. Should be light golden brown top and bottom

Although time consuming, very worthwhile and fun to make with and for other people.
