1 1/2 lbs. plum tomatoes
2 cloves garlic
3 tbsp. balsamic vinegar
1/2 cup olive oil
1/2 tsp. red pepper flakes
1/2 cup chopped fresh basil
1 cup fresh mozzarella
optional: 1/4 cup pine nuts lightly browned

Directions:

Cook pasta. Core and seed tomatoes then chop into small pieces. Add freshly crushed garlic, vinegar, oil, pepper and basil. Cut mozzarella into small pieces. Mix everything together and serve over pasta at room temperature.
