2 1/2 c. chicken broth (Either buy in soup cans or make with chicken bouillon cubes.)
1 c. butter or margarine
1/2 c. chopped onion (or less)
1/2 c. chopped celery
4 oz. can mushroom stems and pieces, drained
1/4 c. dried parsley flakes
1 1/2 tsp. rubbed sage
1 tsp. poultry seasoning
1 tsp. salt
1/2 tsp. pepper
12 c. day-old bread cubes (1/2" pieces)
2 eggs
1 can condensed cream of chicken soup
5 to 6 c. cubed, cooked chicken (I use 4 cans [10 oz. each] of chicken.)

In a saucepan, combine the first 10 ingredients. Simmer for 10 minutes; remove from heat. Combine eggs and soup; stir into broth mixture until smooth. Place bread cubes in a large bowl. Pour broth and soup mixture over bread and toss well. In a 5-qt. crock pot, layer half of the dressing followed by the chicken; repeat layers. Cover and cook on low for 4 1/2 to 5 hours or until a meat thermometer inserted into stuffing reads 160º.
