Irish Brown Soda Bread Recipe

2 c. WW flour
1 c. all purpose flour
1/4 c. oats (steel cut OK)
2 T brown sugar
1 T. baking powder
1 t. baking soda
1/2 t. salt
4 T. unsalted butter
1 c. currants (can soak in Irish whiskey)
1 c. or more buttermilk (up to 2 c)
1 egg
orange zest optional

Directions:

Set rack in mid oven at 400º
Combine flour, sugar, baking powder, soda,
salt. Stir well.
Cut in the butter until it disappears into dry ingredients.
Stir in currants.

In small bowl, whisk buttermilk and egg together. Mix into dough with rubber spatula.
Dough should hold together, should not be sticky.
Turn onto lightly floured surface and fold it over itself several times (about 5).
Pat out into about 7 inch circle. Transfer to parchment on sheet pan. Cut a cross on the top of loaf
Bake 15 min. the reduce heat to 350 and bake 20-25 min until toothpick emerges clean.
Cool on rack, serve warm or room temp with sweet butter and/or bitter orange marmalade.
