4 large red peppers
4-6 scallions
1 clove garlic
2 tbsp. oil
14 oz. ground meat
salt
pepper
sweet paprika
1 can diced tomatoes
1 can corn
1 pinch sugar
1 tbsp. balsamic vinegar
10 oz. grated cheese
1 1/4 cups instant beef broth

Cut off the top of the peppers, deseed them and make the bottoms straight, so that the peppers can stand. Cut the tops of peppers into small pieces and set aside. Heat oven to 375°. Cut the scallions in rings and dice the garlic. Sauté scallions, garlic and diced peppers in oil. Brown meat; add the scallions; mix and season with salt & pepper. Add tomatoes and corn. Season with sugar, vinegar and sweet paprika. Cook for 5 minutes. Place the peppers in a high casserole dish. Fill the peppers with the meat and sprinkle with cheese. Heat the broth and pour it over the peppers. Bake for 25 minutes. Serve with pasta.
