3 to 4 lb. boneless pork roast
3 T. olive oil
1-1/2 tsp. lemon juice
4 cloves garlic, minced
1-1/4 tsp. dry mustard
1 tsp. salt
3/4 tsp. oregano
1/2 tsp. rosemary, crushed
3/4 tsp. thyme
1/2 tsp. pepper

6 medium potatoes, peeled /cut into bite size wedges
3 large onions, cut in half then quartered
1 medium tomato, cut into wedges (optional)
1 pkg. Lipton Onion Soup mix
1/4 c. olive oil

In small bowl, combine olive oil, lemon juice, garlic, mustard and seasonings. Rub onto roast. Place in a roasting pan or on a rack in a roasting pan. Bake, uncovered, at 350° for 40 minutes.

While roast is baking, in small bowl, mix Lipton Onion soup with 1/4 c. olive oil. In separate bowl mix potatoes, onions & tomato. Add onion soup mixture and toss.

After initial 40 minutes remove roast from oven, add the potatoes, onions and tomato to the pan. Bake another 30-45 minutes longer or until a meat thermometer reads 160º. Let stand for 5 to 10 minutes before slicing. If vegetables are not tender let them cook a little longer while meat is standing.
