2 c. self-rising whitecorn meal 5 tbsp. corn oil
1 c. plain flour 2 eggs
3 tbsp. sugar
1 1/2 c. buttermilk

Directions:
Directions:
Heat oven to 425º. Large mixing bowl put corn meal, flour and sugar. Mix well. In smaller bowl mix buttermilk, corn oil and eggs. Beat well. Add mixture to dry ingredients and beat, if too dry add more buttermilk. Put in iron skillet with cooking oil coating. Bake for 35 minutes.
