2 Cornish Game Hens (or more)
1 onion chopped in quarters
1 stalk celery chopped in 3" pieces
salt, pepper, garlic powder & Cavendar's seasonings
1/2 jar orange marmalade jelly melted

Directions:
Directions:
Clean game hens, dry, and season inside and out with seasonings. Stuff cavity with onion and celery. Put hens in shallow pan with 1/2 cup water and bake covered in 350º oven for at least an hour. Begin glazing hens with melted marmalade jelly every ten minutes for another 1/2 hour. When hens are golden brown from the glaze, remove and let sit for 10 minutes before cutting in half and serving.

I serve the hens on a big platter on a bed of wild rice, surrounded by Italian style green beans. It makes a beautiful presentation!
NOTE: The more hens you use the more onions, celery and marmalade you will need.
