4-5 lb bottom round or rump roast, crisco or vegetable oil for browning, 1 large onion- sliced, pkg of carrots, 1 lb mushrooms, salt and pepper, 2 large cans beef broth, 2 large cans water., wondra flour.

Coat meat with salt and pepper and then brown thoroughly in a Dutch oven. Remove the meat and brown the carrots and onion until lightly browned, add mushrooms. Remove carrots, mushrooms and onion and set aside. Return roast to pot and cover with water and beef broth (1/2 up on roast) Bring to a boil and then turn to low, cover pot and simmer for 2-3 hours until fork tender. Put carrots and onions back in pot about 1/2 hour before finished. Remove all from pot and place about 2-3 tbsp wondra flour in a small bowl and add water to blend. Add to the juices in the pot, whisking quickly (so it doesn't lump). Cook down until thickened and serve.
