8 thin slices veal (about 1 lb.)
1/2 cup flour
salt & pepper, to taste
2 tbsp. butter
1/4 lb. mushrooms, sliced thin (about 2 cups)
2 tbsp. vegetable oil
1 tsp. dried rosemary,
8 thin slices Fontina, Gruyère or Swiss cheese
(about 1/2 lb); each slice cut into a rectangle large enough to cover a veal slice

Directions:
Directions:
Pound veal with a mallet. Dredge in flour, salt & pepper. Heat butter and cook mushrooms until lightly browned. Heat oil in another skillet and cook veal until nicely browned. Arrange veal on baking sheet. Sprinkle each slice with an equal portion of rosemary. Arrange mushrooms on the meat. Top with cheese. Broil until cheese melts.
