1 qt. milk
1/4 cup granulated sugar
*1/4 cup raw white rice, washed
1 tbsp. butter
1/4 tsp. salt
1/4 tsp. nutmeg and 1/2 tsp. cinnamon
1 tsp. vanilla (use real vanilla, not imitation)
1/2 cup raisins
*for a thicker pudding, rice may be increased to 6-8 tbsp.

Heat oven to 325º F. Combine 1st 7 ingredients in greased 1 1/2 qt. casserole, sprinkle cinnamon (amount to your taste) over top of pudding. Bake, uncovered, in moderate oven of 325º F. for 2 1/2 hrs, or until rice is done, stir often. Add raisins after 1 hour. Serve warm with whipped cream, berries, fruit or maple sugar. (This recipe comes from Anna Mae McDowells' 1942 Good Housekeeping Cook Book) The girls loved it with nothing on top!
