Dough:
3 cups flour
2 full tbsp Crisco
2 eggs
Dash of salt
3/4 cups water
3 cups filling

Potato Filling:
3 cups of mashed potatoes
Add salt and white pepper
American cheese and sharp cheese to individual taste
Mix all ingredients well.

Cottage cheese filling:
1 lb pressed farmer's cheese
1 egg yolk
Pinch of salt and sugar to individual taste
Mix all ingredients well.

Directions:
Directions:
Mix first four ingredients, then add water slowly to make a medium soft dough. Knead well, then roll on pastry board until thin. Cut into 4-inch squares or rounds. Place a tbsp of filling on each piece. Fold dough in half and pinch edges together to prevent filling from escaping. Bring a large pot of water to a boil (add a few drops of oil). Drop pierogie into boiling water. Cook until all pierogie rise to the top. Cook a few minutes longer and then remove from the boiling water. Place in cold water and then let dry. Pour melted butter and lightly browned onions over the pierogie and serve.
