1 tsp. vegetable oil
1 lb. pork tenderloin cut in 1/4-inch slices
2 large Granny Smith apples, peeled, cored and cut in 1/4-inch slices
1/3 cup frozen unsweetened apple juice concentrate
2 tsp. Dijon mustard
salt & pepper

Coat nonstick pan with Pam. Sauté apples over medium-high heat until tender. Add apple juice concentrate and bring to a boil. Stir in mustard, salt & pepper. Add pork. Cook until thoroughly tender.
