2 white fish filets, such as cod
2 tbsp. lemon juice
salt & pepper
1 pkg. frozen leaf spinach (500 grams)
nutmeg
2 tbsp. butter or margarine
3 carrots, grated
1 scallion, chopped
1 tbsp. flour
100 ml. vegetable broth (about 1/2 cup)
50 gram creme fraiche or sour cream
4 tbsp. whipping cream

Directions:

Sprinkle lemon juice, salt & pepper over fish filets. Boil spinach in salt water, let it cool, drain it well. Season spinach with salt & pepper and nutmeg. In a greased baking dish, place spinach in the bottom and the fish filets on top. Sauté scallions and carrots in butter, then add flour. Add broth, creme fraiche and cream, let boil briefly. Add salt & pepper and lemon juice to taste. Pour sauce over fish. Bake at 350º for about 25 minutes until fish is tender and flaky.
