Filling:
1 c. crushed pineapple, undrained
1 tbsp cornstarch
1 tbsp butter
1/2 c. brown sugar
1 tbsp lemon juice
Crust:
6 graham crackers, finely crushed
1/2 c. flour
1/2 c. brown sugar
1/2 c. butter
1/2 c. coconut
Meringue:
2 egg whites
4 tbsp white sugar

Directions:
Preheat oven to 350º F.
In sauce pan cook filling ingredients until thick. Let cool.
Mix crust ingredients together. Press into 8 x 8" pan. Bake 5 min. Let cool.
Spread filling over crust.
Whip egg whites & sugar until stiff. Spread over filling. Bake until browned.
