2 tbsp extra-virgin olive oil
1/2 medium onion, chopped
4 pieces chicken (legs, thighs, wings)
1 inch ginger, grated fine
1 clove garlic, minced
1/3 cup long-grain rice
2 1/2 cups low sodium chicken stock
2 1/2 cups water
3 tbsp fresh lemon juice (about 3 lemons)
salt & pepper to taste
fish sauce to taste (optional)
green onions, fried garlic as garnish (optional)

- heat oil on medium heat; cook onion until soft & translucent (about 5 mins). season chicken with salt & pepper & add to onions. cook 3-5 minutes until golden brown on each side. add ginger and garlic and saute 1 minute more.

- add stock & water; bring to a simmer. cook, covered, until rice is tender (about 20 mins)

- serve with fresh-squeezed lemon juice and fish sauce

great soup for a cold day or when you have a cold! add more ginger for spice. instead of fish sauce, season with salt to taste. add green onions or fried garlic as a garnish.
