3 medium oranges
4 tbsp. butter
1/2 cup diced ham
3 cloves garlic
2 large onions
1 green pepper
1 red pepper
3 whole chicken breasts, boned, skinned and thinly sliced
1/4 cup bourbon
1/2 tsp. crushed red pepper
1/2 cup frozen peas, thawed
4 scallions

Grate peel from one orange. Squeeze juice from oranges to make 1 1/4 cups. In skillet heat 2 tbsp. butter. Add ham, garlic, onions and peppers. Cook until barely tender; set aside. Heat remaining butter in skillet. Add chicken; cook slightly. Add orange juice, bourbon and crushed red pepper. Cover and cook for 3 minutes. Remove chicken; set aside. Boil sauce in skillet rapidly until liquid reduced to 2/3 cup. Return vegetables and chicken to skillet; add peas and scallions. Heat thoroughly. Sprinkle with grated orange peel. Serve over rice.
