6-7 T. good pork rub
12 oz. good ale or dark beer
5 cloves roasted garlic
5 lb pork butt

Directions:

Rub pork and wrap in plastic wrap 1 hour or overnight
Oven 500º
Roasting pan lined with heavy foil for 45 min.
Remove from oven. Lower temp to 325º
Pour beer over and add roasted garlic gloves scattered
Cover tightly with foil and poke about 10 holes over the top.
Cook 3 to 3 1/2 hours until falls apart.
Remove roast and wrap in foil.
Pour pan juices into saucepan and add
1/2 c. ketchup
2 T. whole grain Dijon
1/3 c. brown sugar
3 T. Worchestershire
Bring to simmer and reduce by half and thick, at least 20-40 min
Pull pork apart, remove fat, pour sauce over the pork and work through until fully absorbed.
