1 cup flour
1 teaspoon double-acting baking powder
1/2 teaspoon salt
3 eggs
1 cup sugar
1 teaspoon vanilla or lemon extract
1/3 cup hot water
2 tablespoon sifted confectioners' sugar

Directions:
Directions:
Sift dry ingredients together and set aside. Beat eggs until thick and lemon colored. Add the sugar and flavoring, beat well. Add the hot water; beat well. Add the dry ingredients all at once, mix well.
Turn into a 15 x 10 inch jelly roll pan, lined with greased waxed paper. Bake at 375 degrees for 12-15 minutes. Loosen edges and turn out immediately onto a towel sprinkled with confectioners' sugar. Remove paper. Roll up in towel, beginning at short end. Cool. Unroll; spread with your favorite jelly or filling. Reroll. Sprinkle lightly with confectioners' sugar. Slice as if this was a roll of bread.
