Ingredients:  
1. 3 chopped onions
2. 3 cloves garlic
3. 1/4 c olive oil
4. 1 green pepper
5. 2 lb ground beef
6. 1/4 c flour
7. 1/2 tsp oregano
8. 3 small cans chopped olives
9. 1 large can Las Palmas enchilada sauce
10. 1 46 oz can tomato juice
11. 1 1/2 lb grated cheddar cheese
12. 2 packages saltine crackers

Directions:
Directions:
Cook the 1st 4 ingredients until onions & garlic are tender.
Add ground beef. cook until done.
Add ingredients 6 thru 10 & mix together.
Butter a 11x 13 x 2 inch or larger pan.
Put a layer of crackers, then a layer of meat mixture, then cheese.
Repeat 3 times, finishing with cheese .
Bake 45 minutes at 350º.
Makes 20 servings. Half the recipe for less.
