10 eggs
1/2 cup oil
1/2 cup flour
1/2 tsp. salt
1 tbsp. baking powder
1 pint cottage cheese (small curd)
1 lb. grated Jack cheese
1 - 4 oz. can diced green chilies

Directions:
Directions:
Beat 10 eggs and add remaining ingredients. Pour into 9 x 13 greased casserole. Bake at 350º for 35 minutes.

1) Mix the day before and bake on day served if you wish.
2) Bake and freeze squares to be heated in the microwave (keep squares separated with plastic wrap)
3) Bake and keep in refrigerator for up to a week. Heat in microwave.
4) Top with salsa if you wish.
